Store cupboard pasta salad

Saturday, August 03, 2013

Last night I went out with some of the girls from work. We had a few cocktails but nothing too heavy. This morning I felt like rubbish. Tired and shaky. But man were those cocktails good. All I fancied eating this morning was pasta salad. I looked for recipes but none of them matched up to what I wanted, so I made up my own.

225g pasta (I used fusilli)
a bag of pre-packed salad (lettuce, carrot, red cabbage)
5 spring onions
a handful of red grapes, halved
2 tablespoons of mayonnaise
salt and pepper to season

Cook the pasta according to pack instructions and leave to cool.
Add all the salad into the bowl and add the cooled pasta.

Add the mayonnaise (you may want to add more) and the seasoning. Stir until combined.
Serve or leave to cool in the fridge until needed.

Yum.

The addition of grapes was the Mr's idea. It works so well!

  1. I love grapes in salad! Some people might find it weird, but like you said, it actually works really really well. Apples and raisins are really good as well.

  2. I love adding grapes to savoury things!! I popped some in a salad with feta earlier in the week and it worked SO well! Pasta is a brilliant hangover cure though. Glad you had a fun night! xx
