Eggy bread recipe.

Sunday mornings were meant for one thing. Brunch. And brunch is meant for one thing. Eggy bread. No not french toast, no icing sugar, crushed berries or anything fancy here. Just good old fashioned eggy bread with a big pot of ketchup to dip those eggy bread fingers in to. 

Every other weekend I have the days off and it's just lovely. If you work in retail you will know how having a weekend off is rare but our schedules have been worked out so I can have the time off. It's perfect. I enjoy Sunday's so much and I've never understood people who hate Sunday's. It's the best day, an excuse to be lazy, bake and eat and spend it with those you love. It's just perfect. 

Onto the food. I tend to wake up around half nine and the Mr is already up. The routine goes the same every time. "Have you had breakfast?" "No." "Fancy eggy bread" "Yeah alright then." And then we get to work. I cut the bread and break the eggs, Dion does the rest. Oh I make the tea too!


2 eggs, beaten
4 slices of bread, crusts cut off
sunflower oil
salt & pepper

Take your bread, with the crusts cut off and cut into fingers. I usually get four from each slice, but you can cut thicker or thinner slices depending on your preference.

In a bowl with the beaten eggs, add salt and pepper to taste.

Meanwhile heat 2tbsp of oil in a large frying pan.

Dip the bread fingers into the eggy mixture, until beautifully coated.

As soon as the oil is hot enough add the eggy fingers. Cook until golden and crispy.

I drain the fingers onto a piece of kitchen roll. This just removes any excess oil. 

Continue until all fingers are fried.

Prepare a big pot of ketchup and make sure you have big mug of tea ready.
