Mother's day: Shortbread buttons.

I know I made "Easy shortbread" a few weeks ago. That has it's place and is super easy to make but when it comes to making shortbread properly I think I've found the ultimate recipe. I recently popped into my local library (I know a library, remember those?) to pick up some books about running a business and I couldn't resist looking in the cookery section and naturally I had to borrow a couple of recipe books. Well I'm only human. This recipe comes from the Primrose Bakery book, it has such lovely recipes in it. I need a make a few more before I return my books, I don't want any late fees!

I thought these would make a perfect Mother's Day present especially if your mum, like mine, is a sewer or in to crafting. I've wanted to make these for ages and I've finally got around to doing it. A couple of years a go I spent the whole year buying buttons to put in a big jar for my mum for Christmas. Sounds odd but she adores buttons and would collect them as a girl so what's better than a shortbread biscuit shaped like one of your favourite things?

You will need:
125g icing sugar,
225g plain flour, sifted, plus more for dusting
125g cornflour, sifted
225g unsalted butter


Preheat the oven to 180ºc/gas mark 4.

Grease and line a few baking trays.

Add the sifted icing sugar, cornflour and flour into a food processor bowl. Add the butter a beat on a slow speed until the mixture comes together into a ball. (You can do this by hand if you don't own a food processor, it will just take a bit longer for the mixture to come together)

Roll out the shortbread onto a floured surface. You will need one large round cutter and one smaller round cutter to make the button shape. 

Cut out buttons using the large cutter. Then take the smaller cutter and press lightly onto the button to make the indent. You will then need a skewer or a pastry brush to make the button holes. 

Place on the baking trays and bake for around 15 to 20 minutes. Take the shortbread out as soon as it goes lightly golden at the edges, if you leave it any longer the shortbread will be overcooked. 

You may need to re-do the button holes by carefully poking the skewer back through. 

Leave to cool and then present in a gift box or why not thread the buttons with fabric or candy laces?
