So I had some leftover biscuit dough in the freezer and I thought it was about time I used it up. I was completely stuck for ideas, until Samantha from Planet Bake Life came to my rescue. She recommended trying white chocolate and sesame seeds. I like to keep things safe, things I know everyone will eat but I gave it a go and I'm really glad I did. It tastes amazing the perfect filling for biscuits. I made a white chocolate and sesame ganache.
These reminded me a little bit of custard creams and so the posh custard cream was born.
Ingredients:
Vanilla biscuit dough (click here for the recipe)
100g white chocolate
80ml double cream
20g butter
25g sesame seeds
Chop up the chocolate into small chunks and place in a bowl with the sesame seeds.
Heat the cream and the butter in a pan, do not let it boil.
Pour the cream and butter over the chocolate and leave to stand for a couple of minutes.
Stir carefully until the chocolate has melted. Leave to thicken (mine took around an hour)
Cook your biscuits while your waiting for your ganache to set.
Once the biscuits have cooled and the ganache has set assemble your posh custard creams. Finish with icing sugar. (Everything looks better with icing sugar)

ReplyDeleteWe use seseme seeds in the bakery on all our rolls and I've been experimenting with these since that demo I told you about so I'm glad they worked for you too :)
