Feed Your Family For £2


Voucherbox.co.uk has teamed up with Zamcog to present The £2 Challenge: Can you feed you and/or each person in your family for £2 per head per day? Of course being the budget foodie I am jumped at the chance. I wanted to show people that you can eat decent food on such a small budget and raise awareness of the campaign.

Did you know it costs £2 to feed and educate a child in Zambia each day. So the blogging community has been challenged to create a days worth of food for £2 per head. As we are a family of 3. That makes our budget £6. Which is quite a bit to work with. I tried my best to get 5 portions of fruit & veg into it and I think I've achieved it. 

This challenge has come at the perfect time when we are all a little bit cash strapped after Christmas and January seems to have gone on for months. So I hope you like my recipes and shopping list for £6.

Breakfast: £1.53

Value porridge oats - £0.75
2 loose bananas - £0.33
1 pint of whole milk - £0.44

We often start the day off with porridge. It's a great for filling your belly. Topped with a banana to get a bit of fruit in your system first thing. You could even add a few of the sultanas (in snacks) to the bowl too.

Lunch: £2.06

Tuna chunks (in brine) - £0.65
Wholemeal pitta breads - £0.42
Tinned sweetcorn - £0.35
Value mayo -  £0.40
1/2 cucumber - £0.24

A simple lunch of tuna, mayo and sweetcorn filled pitta breads. Wholemeal bread for some fibre and the sweetcorn to count towards fruit & veg for the day. We then added some cucumber sticks as well.

Dinner: £1.13
Soft cheese - £0.49
Tinned peas - £0.21
3 loose mushrooms £0.23
Value spaghetti - £0.20

For dinner it was cream cheese, peas and crispy mushroom pasta. It's so simple to make. 

Cream cheese pasta.

- Serves 3 - 

200g tub of soft cheese

1 tin of peas

3 mushrooms, finely sliced.

200g spaghetti

Cook the spaghetti according to pack instructions.

Place the mushrooms onto a baking tray and cook in hot oven (200ºC/Gas 6) for 10 minutes until crisp.

Add the peas into the spaghetti water for the last 2 minutes of cooking.

Drain the spaghetti. Add in the peas, soft cheese and 3/4's of the mushrooms. Stir until combined.

Top with the remaining crispy mushrooms and serve.

2 loose carrots - £0.22

As for snacks a couple of carrots chopped up and a 500g bag of sultanas that can be snacked on throughout the day.

Drinks: £0.00
Tap water - £0

Total Spend: £5.78

I'm pretty impressed with myself. A whole days worth of food for 3 (it could stretch to 4) for just £6. I even came in under budget.
