Easter is around the corner and it's about time I gave you some Easter posts! My mum stopped giving us Easter eggs a few years ago. It got too expensive for her to buy as all eggs so instead she bakes us something. Last year she made us rocky road cake, which is what this recipe is based on. I remember how good it was and needed to make it again. I then came across a recipe for mini egg rocky road and so I combined the two recipes and created this. And boy is it good!

Recipe adapted from Good Food and Good Too Know.

Ingredients
Chocolate cake: 
175g butter, plus extra for greasing
200g light soft brown sugar
2 large eggs
140g self raising flour
50g cocoa powder

Rocky road:
100g butter
300g dark chocolate, chopped
3tbsp golden syrup
handful of mini marshmallows
100g mini eggs
85g walnut halves

Preheat the oven to 180ºC/Gas Mark 4. Grease and line a square cake tin with baking parchment.

Gently melt the butter in a large pan and leave to cool for 5 minutes. Then stir in the sugar, eggs, flour and cocoa and beat well.

Spoon the mixture into the tin, level the surface and bake for 35 minutes or until a skewer inserted comes out clean.

Leave the cake to cool completely.

To make the rocky road. Gently melt the butter, chocolate and syrup together. Cool for 15 minutes, this stops the marshmallows from melting. After 15 minutes stir in the marshmallows, mini eggs and walnuts.

Spoon on top of the cake and leave to set in a cool place.

Serve or wrap up and give as a gift!
