Pancakes with the Mr.

Want to know a secret? I can't cook pancakes. Every time I've tried I end up with them stuck to pan or burn them. It's something I can't do and to be honest I'm not going to learn because I just so happen to live with someone who makes amazing pancakes.

There's nothing better than pancakes, a mug of good coffee and good company (well I'll suppose he'll have to do!) on a Sunday morning. And the best thing is I don't have to make them. I make the coffee and then I've been given the title of the "syrup lady". He's a clever one. So my job is too make sure that each pancake has enough syrup on. I know you're jealous of my job! 

In case you didn't know pancake day is next Tuesday (it's also the day my nephew is due to be born!) so here's a nice and easy recipe to get you started. Toppings? That's up to you.


You will need -

200g plain flour or self raising flour (self raising makes a thicker pancake)
200ml milk
100ml water
1 large egg
1 tbsp oil
pinch of salt

Sift the flour into a bowl, add the pinch of salt.

Make a well in the centre of the bowl and break the egg in.

Add the oil and milk and stir. Slowly add the water to get the right consistency (as thick as double cream).

Heat a non stick pan with spray oil or a small amount of oil. Roll it around the pan and then pour the excess into a cup.

Using a ladle add one spoonful into the middle of the pan and the weight should spread the pancake to the perfect size for your pan. If not roll the pan or use the back of the ladle to spread.

Wait until the mixture has started to set on top of the pancake and then flip, cook until the pancake is a light golden colour.

Repeat until you have no mixture left. The mixture usually makes eight pancakes. Enough for four each. 

Top with whatever you like. Golden syrup is always a winner for us!post signature

  1. We're cheating ... we've got some ready mix stuff all ready to go .. shocking eh?! My favourite topping is always cherry pie filling with tons of cream . SO GOOD!

  2. I was never a fan of the American style pancakes until moving, it was all about the crepes for me. It's all about the maple syrup for us, always a treat to buy one of the more expensive bottles of it's gooey goodness!

  3. I can't cook pancakes either, it seems so simple but I always get them stuck to the pan and if I manage a non-burnt one it's some deformed lumpy thing! I think we're getting the ready mix in this year! I had some earlier with chocolate spread and strawberries, it was surprisingly nice!
