Iced Easter biscuits.

I started off today with coffee and pancakes courtesy of the Mr. He has two weeks of for Easter (the joys of working in education). I'm expecting my breakfast made for me every day (in my dreams) as well as a long list of jobs for him to do. But they all have to wait as he has his dissertation to complete and I salute anyone that can write 10,000 words that make sense. I know for sure that I would struggle. Anyway onto these biscuits.

It was a couple of weeks ago on a grey Monday morning (a lot like today, although the sun is starting to peek through the clouds) we made this Easter biscuits. I invited over my Sister in law and nieces to help. Well only one could help, the other is only a month and a bit old. 

The reason to invite them over other than to see them? Well the fact that my Sister in law can pipe and decorate a lot better than me. It's something I'm not that great at and I really need to improve. There's a quarter year resolution for you! I did pipe the Easter eggs, which I'm proud of but I really need to improve.

I'm going through a bit of a biscuit stage as well as loaf cakes at the moment. I love how with biscuits you can just eat loads. Although I'm sure that my waistline doesn't agree. I do love a good biscuit with a cup of coffee.

You will need-

300g plain flour
¼ tsp salt
150g golden caster sugar
150g cold unsalted butter, diced
1 large egg
1 tsp vanilla extract (good quality)

Line a couple of trays with baking parchment and heat oven to 180º/gas 4. 

Mix together the flour, salt and caster sugar. Add the butter and rub together until the mixture resembles fine breadcrumbs.

Beat the egg and vanilla extract together with a fork, then mix into the other ingredients. 

Knead until even and leave chill in the fridge for around an hour.

Roll out the dough on a lightly floured surface until about 4-5mm thick. 

Stamp out any shape you like, I used Easter shapes but you could use whatever you fancy.

Transfer to baking trays and bake for around 10-15 mins until golden. Remove from the oven, transfer to a wire rack and leave to cool before decorating.

You need to make two lots of icing. One to pipe the outline and the other to flood. See this guide here, it's says it far better than I could. 

Leave the icing to set and enjoy your Easter biscuits!

  1. Oh so jealous of your other half bringing you coffee and pancakes! You have him very well trained- I think mine has made me a cup of tea maybe twice, and that's about it!!

    As for the biscuits- yum! I'm on a biscuit kick at the moment too- probably because I gave up chocolate for lent and needed something to replace it with. These look great!
