It's hard to believe that Easter is almost here. I swear it was only just Christmas. Having a baby makes time go even faster than it normally does. So I've failed a little on the Easter recipe front. I had some great ideas but time got the better of me. I did however write a recipe for Chalk Kids, Creme Egg Pastry Twists anyone?

So with less than 2 days to go here is my Easter offering. Chocolate balls. Chocolate balls that contain one of your five-a-day and lots of fibre. Consider it a mini Easter egg for the health conscious. These little bites make the perfect healthy snack and give you that chocolate hit.

I used the mini eggs from the Lindt EXCELLENCE 70% Dark Shell Egg. A few of those blended up with pitted dates, coconut and vanilla make a tasty snack. My husband was rather impressed with the Easter egg as he loves dark chocolate. When I opened the box he excitedly said "An Easter egg I'll eat". He's an odd one. I'll eat any Easter Eggs! 

Hopefully you will still be able to find the Lindt Egg in the shops but if not half of the Lindt EXCELLENCE 70% Dark chocolate bar will work just as well.

These bites are the perfect healthy snack and would work great in kids lunchboxes, although you might want to omit the cocoa powder as it does make them a little bitter. The dates give the balls a cake like texture and you could easily trick kids into eating these.

 Date, Coconut, Vanilla and Dark Chocolate Balls 

- Makes 15 -


250g pitted dates

150g desiccated coconut 

1 tsp vanilla extract

Cocoa powder, to coat


- Place all of the ingridents into a food processor.

- Blend until all the ingredients have combined and has turned into a paste.

- Mould the paste into bitesize balls, 

- Coat in the cocoa powder and leave for an hour to set. 

- Will keep in an airtight container for 1 week.
