Ahhhh it's nearly Christmas. I still have presents to wrap, meat to defrost and today I'm baking and decorating gingerbread with a 1, 2 and 9 year old. Wish me luck! All in the spirit of Christmas huh?
If there were prizes for groundbreaking ideas this is not going to win one. See this more as a friendly reminder rather than a recipe. It's Christmas Eve Eve and you really need to be thinking about Christmas Dinner. I really hope that you've got it all sorted but if not how about this idea. You've probably got a box of stuffing sitting in the cupboard waiting patiently for the big day well instead of just shoving it in a dish and hoping for the best why not make it extra tasty. The one way to improve everything, this is my husband and brothers logic, add bacon. So that's what I did. And although it's super simple to do it does make the stuffing even better.
Don't fear if you have any leftovers on the day as I have got a fabulous recipe coming up. Make sure your back on Boxing day!
Bacon Wrapped Stuffing Balls
- Serves 6 -
175g sage and onion stuffing
275g bacon
Preheat the oven to 200C/Gas 6.
Make up the stuffing according to pack instructions.
Leave to cool slightly.
Slice the bacon into long strips.
Roll the stuffing into a ball and wrap the bacon around, you'll have around 12 balls. Place onto a baking tray.
Bake for 30 - 40 minutes until the bacon is crisp.
Serve with Christmas dinner.
Top tip for you! Prep these Christmas Eve and you can just pop them straight into the oven on Christmas day without having to worry about them!
