Hot Chocolate Cupcakes.

My oven is broken. Boo. After a dramatic day on Friday involving my oven tripping the electric of the whole house and then discovering that it was oven causing the problem. I was in the middle of baking these. That batch had to binned. They were half cooked and there was no coming back from that. So I went over to my mum's yesterday and begged to use her oven. It's really sad but I feel really lost with out it and I can't wait until it's fixed.

 In the meantime I have to decide what food we can eat this week that involves no cooking or the use of a microwave. It would be easy if I liked ready meals but I'm not sure I can bring myself to eat them.

Anyway onto these beauties. They are the winter version of the ice cream cupcakes I baked last summer. This a perfect washed down with a mug of hot chocolate or even just on their own.

You will need:

For the cakes:
175g caster sugar
175g butter, softened
175g self raising flour, sifted
 1 tbsp cocoa powder
3 eggs
1 tbsp of vanilla extract

For the icing:
250g butter
200g icing sugar
1 tbsp milk
1 tbsp vanilla extract

For decoration:
4 flakes, cut into 12 pieces
mini marshmallows
cocoa powder

Preheat the oven to 180ºC/Gas 4. Line a 12 hole muffin tin with cupcake cases.

Cream together the caster sugar, butter and vanilla extract with an electric whisk.

Add a third of the sifted flour, cocoa powder into the bowl and one egg. Mix until smooth.

Repeat with the remaining eggs and flour.

Spoon into cupcake cases and bake for around 20 minutes or until a skewer inserted in the middle comes out clean.

To prepare the buttercream icing. Whisk together the butter, icing sugar, milk and vanilla until smooth. 

Once the cupcakes are cool pipe the buttercream on top to look like whipped cream.

Add a flake into the icing and dot the marshmallows around the buttercream.

Dust with a sprinkling of cocoa powder.

  1. These look amazing! I'd be lost without my oven too - I don't think a single day goes by without me using it. I hope you get it sorted soon!
